The institute promotes and researches the art of chocolate both locally and on a worldwide basis.
The aims of the institute are to improve the standards of chocolate by research and correlation of collective knowledge. This is then allied to the science of heuristic procedures which will involve a concatenation of existing knowledge and practises and will also allow the institute to follow a didactic path to the benefit of all those interested in chocolate and the art of the chocolatier.
